Today we are going to make a very tangy, spicy, and flavorful Achari Aloo Recipe (Pickled Potato Curry).
This dish can be prepared for breakfast, lunch, or dinner. All the spices used are easily available in your kitchen, and once you taste it, you will want to cook it again and again.

Ingredients
½ kg boiled potatoes
1 tsp fennel seeds
1 tsp cumin seeds
½ tsp fenugreek seeds
1 tsp coriander seeds
3–4 dry red chilies
½ tsp nigella seeds (kalonji)
½ tsp mustard seeds
A pinch of asafoetida (hing)
1 tbsp oil
3–4 green chilies (slit)
2 medium onions (chopped)
½ tsp turmeric powder
½ tsp cumin powder
1 tsp Kashmiri chili powder (deghi mirch)
Salt to taste
2–3 tbsp water
A handful of fresh coriander leaves
1 tsp pickle (green chili / mango / mixed – any type)

Step by Step Recipe
Step 1 – Boil the Potatoes
Wash and cut potatoes. In a pan, add 1 liter of water and ½ tsp salt.
Boil potatoes on medium flame until 90% cooked (not too soft). Drain and set aside.
Step 2 – Prepare the Achari Masala
Dry roast fennel seeds, cumin seeds, fenugreek seeds, dry red chilies, nigella seeds, and mustard seeds on low flame.
Cool and grind them coarsely in a blender. Keep aside.
Step 3 – Fry the Potatoes
Heat 1 tbsp oil in a pan.
Add the boiled potatoes and fry on high flame until light golden.
Remove and keep aside.
Step 4 – Make the Masala Base
In the same oil, add cumin and mustard seeds.
Add green chilies and a pinch of asafoetida.
Now add chopped onions and fry until light golden.
Add Kashmiri chili powder, turmeric, cumin powder, and salt.
Sautรฉ well. If it sticks, add a little water.
Step 5 – Mix the Aloo with Achari Masala
Now add fried potatoes into the masala.
Add 2 tbsp prepared Achari Masala and mix well.
Sprinkle a little water and stir.
Add fresh coriander and 1 tsp pickle. Toss gently and turn off the flame.
Step 6 – Serving
Hot and spicy Achari Aloo Curry is ready to serve!
You can enjoy it with puri, paratha, roti, naan, kulcha, or jeera rice.
It is also perfect for kids’ lunch box or husband’s tiffin.
