๐ Ingredients for Khichda Recipe
Grains
250 g Crushed Wheat
250 g Crushed Barley
Meat
3 kg Beef / Mutton (washed and cleaned)
Lentils & Rice
250 g Bengal Gram (Chana Dal)
250 g Rice
6 tbsp Black Masoor Dal
6 tbsp Moong Dal
6 tbsp Urad Dal
6 tbsp Arhar Dal
6 tbsp Matar Dal
Spices & Herbs
7 tbsp Coriander powder
4 tbsp Red Chili powder
1.5 tbsp Turmeric powder
1 tbsp Kashmiri/Deghi Mirch
Whole spices: 6–7 Dry Red Chilies, 1 Black Cardamom, 5 Green Cardamoms, 8–10 Bay Leaves, 2-inch Cinnamon, Nutmeg, Mace, Cloves
6–7 tbsp Ginger-Garlic paste
7–8 Green Chilies (slit)
Fresh coriander & mint leaves
2 tsp Chaat Masala
2 tsp Black Salt
2 tsp White Salt
Oil & Garnish
4 tbsp Mustard Oil (for cooking)
Fried Onions (Birista)
Lemon slices
Kewra Water (3 caps)

๐ฅ Step by Step Khichda Recipe
Step 1: Soak the Grains
Soak crushed wheat and barley in water for 4–6 hours (or 2 hours in warm water for instant soaking).

Step 2: Cook Wheat & Barley
Pressure cook with 4–5 glasses water for 5–6 whistles until soft. Mash well and keep aside.

Step 3: Prepare Meat – Part 1
Take 1.5 kg meat in a pressure cooker. Add half of roughly chopped onions, half of ground spices, whole spices (bay leaves, red chilies, cinnamon), 3 tbsp ginger-garlic paste, salt, and 2 tbsp oil. Add 1.5 cups water and cook for 20 minutes.

Step 4: Prepare Meat – Part 2
Cook the remaining 1.5 kg meat with the same process using the other half of spices and onions. Pressure cook for 20 minutes until tender.

Step 5: Mash the Grains
Take out the cooked wheat & barley mixture and mash well using a wooden masher. Cover and keep aside.

Step 6: Prepare Fresh Masala
Dry roast fennel seeds, cinnamon, cumin, pepper, cardamom, nutmeg, mace, cloves, and star anise. Grind into fine powder. This masala gives Khichda its traditional aroma.

Step 7: Cook Lentils & Rice
Mix all lentils + rice, wash well, and pressure cook with onions, green chilies, mint leaves, turmeric, and salt. Add 5–6 glasses water and cook for 4–5 whistles.

Step 8: Prepare Fried Onions (Birista)
Thinly slice 500 g onions and deep fry until golden brown. Store for garnish and tadka.

Step 9: Combine Lentils with Grains
Mix cooked lentils into the mashed wheat-barley mixture. Stir well and mash again until smooth consistency. Add water if too thick.

Step 10: Add Meat & Spices
Add cooked meat into the lentil-grain mix. Sprinkle fresh coriander, mint, chaat masala, black salt, and half of the roasted spice powder. Cook on low flame for 5–7 minutes, stirring constantly.

Step 11: Prepare Tadka (Tempering)
Heat mustard oil, fry onions until golden, add bay leaves and dry red/green chilies. Pour this over khichda and sprinkle remaining roasted spice powder. Add kewra water for aroma.

Step 12: Garnish & Serve
Top with fried onions, fresh coriander, mint, and lemon slices. Serve hot with green chilies on the side.
