How to Make Delicious Chicken & Arbi Curry | Easy & Flavorful Indian Dinner Recipe

Today, I’m sharing a delicious dinner recipe that I made for the evening — Chicken & Arbi Curry. It’s full of flavor and absolutely tasty! Along with it, I also prepared Jeera Rice and Khameeri Roti.
All the ingredients we used for this curry are easily available in your kitchen. The recipe turned out to be restaurant-style Chicken & Arbi Curry — you can even call it perfect!

Ingredients
500 gm Chicken
300 gm Arbi (Taro)
1 Bay Leaf
1/2 cup Water
2 Medium-sized Onions
2 Medium-sized Tomatoes
2 Green Chilies
1 1/2 tbsp Oil
2 Medium Onions (finely chopped)
2 Bay Leaves
1 tsp Black Pepper
1 Small Cardamom
1 1/2 tsp Cumin Seeds
1 Nutmeg Flower
1/2 inch Cinnamon Stick
2 tbsp Garlic-Ginger Paste
2 tbsp Coriander Powder
1 tsp Red Chili Powder
1/2 tsp Kashmiri Red Chili Powder
1 cup Water
1 1/2 tsp Salt
1 tbsp Kasuri Methi
1 1/2 cups Water
2–3 Green Chilies
1/2 tsp Garam Masala

Preparing the Ingredients
First, cut the chicken and make 2–3 small cuts on it, then wash thoroughly.
Next, wash and cut the Arbi (Taro) into pieces. (Tip: 250 gm Arbi is enough.)
Take 2 medium-sized onions and 2–3 tomatoes, finely chop the onions and prepare a paste from onions, tomatoes, and green chilies. The dry and powdered spices are listed above — keep them ready. Let’s start cooking!

Step 1
Heat 2 tbsp oil in a cooker on high flame. Add the Arbi and sauté for a while.
Then add 1 bay leaf and 1/4 tsp salt. Fry until a light golden layer forms on top.
Add 1/2 cup water and cook with the lid on for the Arbi to soften completely.

Step 2
Meanwhile, prepare a paste of 2 medium onions, 2–3 tomatoes, and 2 green chilies. Keep it aside.
Finely chop 2 medium onions as well.

Step 3
Heat 1 1/2 tbsp mustard oil in a pan. Add the chopped onions and fry until light golden.
Then add chicken and fry on high flame. Add 1 bay leaf and fry until chicken turns slightly golden.
Now add dry spices: 1 tsp black pepper, 1 1/2 tsp cumin, 1/2 inch cinnamon, 1 nutmeg flower, 1 small cardamom. Sauté briefly.
Add the onion-tomato-chili paste, then garlic-ginger paste (2 tbsp), coriander powder (2 tbsp), red chili powder (1 tsp), Kashmiri chili powder (1/2 tsp). Mix well and fry slightly.
Now add the chicken back into the masala, fry a bit, then add 1 cup water and 1 1/2 tsp salt. Cover and cook on low-medium flame for 10 minutes.

Step 4
After 10 minutes, check the chicken. If not tender, cook for 2–3 more minutes.
Add 1 tbsp Kasuri Methi and mix gently. Then add 1 1/2 cups water for desired consistency (more water for curry, less for thick gravy).
Add 2–3 green chilies and 1/2 tsp garam masala. Cover and cook for 2 minutes on low flame. Turn off the gas and let it rest for 5–7 minutes before serving.

Ready to Serve

This curry also goes well with naan, roti, chapati, or kulcha — especially delicious with butter naan.
