Today I am sharing an instant crispy jalebi recipe, which gets ready in just 10–15 minutes — without any fermentation.
This uses Hydro (HPMC), which gives the jalebi an extra halwai-style crispiness.
Once you make it, you won’t feel like bringing jalebi from the market.

Ingredients (Instant Jalebi)
For Batter
Maida – 1 cup (120 g)
Cornflour – 3 tbsp
Hydro – 1 g
Lemon juice – ½ tsp
Baking soda – ¼ tsp
Orange/Yellow food colour – 2–3 pinches (optional)
Lukewarm water – as required
Oil – for frying
For Sugar Syrup
Sugar – 1 cup
Water – ⅓ cup
Cardamom powder – 1 pinch
Few drops of kewra water

Step-by-Step Method
Step 1 – Batter Prep
In a bowl add:
1 cup maida
3 tbsp cornflour
Food colour
½ tsp lemon juice
Mix well.
Now add lukewarm water little by little and make a smooth batter.
Whisk it for 3–4 minutes so that air bubbles form.
Now add 1 gram Hydro.
๐ Correct Way to Add Hydro
Take 1 spoon of hot water.
Sprinkle 1 g Hydro on top.
After 30 seconds, add it into the batter and mix.
The consistency of the batter should be flowy and ribbon-like.

Step 2 – Make Sugar Syrup
In a pan:
1 cup sugar
⅓ cup water
Cook on medium flame.
Add kewra water + cardamom powder.
Soon the syrup will reach 1-string consistency.

Step 3 – Fry Jalebi
When you are about to fry the jalebi, add ¼ tsp baking soda to the batter.
Heat oil on medium-high flame.
Fill batter in a bottle or piping bag and make jalebi shapes.
Flip when it turns light golden. Fry the other side also.
Now put it in sugar syrup.

Step 4 – Soaking in Syrup
After frying, put the jalebi directly into warm sugar syrup for 15–20 seconds.
The syrup should not be too hot or too cold.
It should be warm but not boiling.
